I've tried contacting WD about this and they claim that it's fine because the DataLifeGuard crap says it's okay. Also the Caviar Green has the Windows 7 .. basically seal of approval on it's page. Is it possible that we all just have bad drives? I'm thinking of doing an advance RMA and comparing the two drives imaging them both with the same thing.
EDIT: Just to add a bit more information to the topic, when I have the Resource Monitor open when the not responding happens I get the "Disk 0 (C:) Queue Length" jumping from around 0-2 to around 30-50. Not entirely sure what that is but I thought it might help.
Also I've tried using the disk utility that Western Digital used to provide for their green drives called WDIDLE3.exe which you can set the idle time before the drive head parks itself (Green drive feature). I've tried increasing the time and disabling it. No dice.

I haven't gotten the information off the drives yet, so they haven't been replaced yet. I never got around to contacting Microsoft because I don't often get the chance to sit in front of my server and read the product verification number off. If someone else could report to them, that would be great.
Btw, WD support is no help at all.

That Windows 7 logo of compatibility is only on WD's site, on Microsoft's Windows 7 compatibility site they don't have any of the 1TB, 1.5TB, 2TB models on it.

Mtesm, your piece of information was quite useful since I couldnt find what's going wrong when the lag occurs.
I just finished the report to Microsoft support with that piece of information. Let's see how they'll be able to help.

Do you guys have your Green drive as the OS drive? Which OS? and What capacity drive? Just trying to see if there's a pattern

Yep my Green is my OS drive.
500Gb
Win7 professional 64 bits
I don't think there is a pattern since you guys got 32bits OS and got more storage capacity.
This might come from one of the technologies used by WD in their caviar green drives.

IntelliPark™
All these ones could be guilty, Power relies on algorithms to optimize transfer and rotation speeds, Seek optimizes search speeds. But I would say that Park is more likely to be the one in cause since it shuts the heads down when not used.

WDIDLE3.exe (The utility I've tried) disables or increases time between the drive head parkings.. It didn't change anything.

Yeah... I think so too. But, at the same time, I think all three of them might be responsible. Whenever I try and stream something off the server when it's doing its laggasm, it seems to still transfer data, although, at abysmal rates (like 10-30kB/s). But it makes very little sense, as sometimes I'm watching an HD movie, which requires a constant 1200 mb/s read and then it goes into lagville... I don't know.
